Broccoli soup and Pesto

Avocado Pesto



Star out with your basic Ingredients

  • Parmesan Cheese 

  • Nuts{you choose what kind}

  • Basil

  • Garlic

  • Cilantro

  • parsley

  • Add Avocado

  • You can add bread crumbs if you don’t want Nuts

Vegan cheeses if you don’t heat regular cheese

Now were going to Do Broccoli Soup 

YAH


Okay so in order to do Broccoli soup let's get the Basic Ingredients shall we

Broccoli

Potato “you can use it as a Thickener and if you put a spoon full of instant potate to make it thick Quickly”

  • Peas

  • Spinach

  • Pesto {above}

  • Celery

  • Seasoning salt

  • Butter

  • Pepper

  • Parsley

  • Cilanto

Now you start with a nice Chicken stock {you can use a vegetable stock it you don’t want to add chicken}


Boil your Potatoes and then once they are done and soft take them out and let them cool {keep you water because it will be part of the Soup}…. Pour in the stock 

Precut the celery Broccoli, add peas, por all your Greens veggies in the liquid to cook, then pour your pesto in. Let it simmer

Pour in your seasons

You can either Mash the potato or {if you have food processor till its small crumbs add a few laddles of the broth from the pot and let it get gooey like a thick smoothie and then dump it back in the soup} this is a substitute for adding a TON of cheese

{trick you don’t want to use potato, use cauliflower and Uca}


Por it into the soup and it will thicken the broccoli soup, stir it in until its thick and then let it come to simmer, turn it off 


It’s soup season and I love to eat a nice soup

We’ve gone from Chicken soup

Beef stew soup

And Broccoli soup

So now is time for a nice heart Veggie soup ingredients


  • Tomatto

  • Onion

  • Carrots

  • Garlic

  • Peas

  • Spinich {I don’t know how to cook anything without it}

  • Celery

  • Cauliflour

  • Corn

Now get your chicken stock let it boil


While it’s come to a boil prep you Veggies cutting it into cubes

Lastly you dump it in the soup, Now here a trick I lick

Take butter {or the can’t believe it’s not butter if you don’t like butter}

Then you put lemon juice Italian seasoning, seasoning salt pepper, cilantro, Oregano and Basil 


Poor it into the soup and the trick is to add a little bit a Lemon zest on top 

Bring it to a boil


Now you want to add chicken for a protein {I am vegan so I use Vegan chicken and I sautee it in the lemon mix} drop it in half way through the cooking process and 

Pour into dish let it cool and eat.
